Dinner last night was made entirely with ingredients from within 15 miles of my house, taking inspiration from the birch and maple sap I've been harvesting: maple sap braised pork belly, birch-parsnip ice cream, herb meringues, burdock-black trumpet purée, caramelized parsnips, and wild garlic.
