Well, since there ain't no snow to be had, it occurred to me to create a little winter scene on my plate.
I made a simple preparation of swordfish steaks, which are just so flavorful and firm, and when you cook them the flesh gets white. I did them on the grill with some cherry wood chips.
On the side, I made grits with white cheddar cheese, with some rendered bacon bits and shrimp and garlic (German White of course!), all topped with a fried egg. True, the yolk gave it a little color, but who's afraid of a little yellow snow?
Also on the side, I made mashed cauliflower and potatoes. That's about as white as you can get.
Paired with my homebrew--not a wit or white ale, rather a saison, but it did have a nice white head on it!
A little winter on your plate, if not out your window.

As soon as I get my new (old--it was built in 1852!) house set up I'll be brewing again, and I'd be glad to have you and/or Dave Liepmann over for a brew.
