Too Many Squash

So, I seemed to have tons of squash from my garden and I was running out of things to do with them. I love zucchini and patty pan but I can only eat so much before I get sick of them. Well the bright idea came to me to pickle them so I can have yummy pickled squash when there isn't a fresh veggie in sight for months. The Lengths I Go For Good Food

     I belong to the Rhinebeck Community Gardens and rightfully so every member must put in so many hours a month to maintain the Garden area. Yesterday was my work day and I shoveled mulch in to wheelbarrows for about 2 hours. Needless to say I really hurt my back and spent most of the night laying on a heating pad wishing there was such a thing as a spine transplant.

     I live in a apartment where my landlord says growing vegetables is not "pretty enough" to do near the apartment. I was lucky enough this year through some begging and pleading to get a plot in the Rhinebeck Community Garden. I love my garden plot, it requires a lot of work because the land used to be a corn field so there is almost nothing left in the soil.
