Green gazpacho. NOTE: I made this for 40 people, so my ingredient approximations for a smaller serving size (6 people) may be a bit off. You must taste taste taste!
2 garlic cloves, 1/3 cup raw pepitas, 1 cup green grapes, 1 bunch scallions (greens and all), 1/2 cup buttermilk, 1 large seedless cucumber (wrapped in plastic) or 2 regular, well scrubbed, 2 tablespoon chopped cilantro (err on the side of less, then add more to taste...strong flavor), 1 jalapeno pepper, 2 cups tomatillos. Grind garlic and pepitas in the food processor until very fine. Then add the rest of the ingredients and run the processor for a full minute to puree (may need to be done in batches). Or use the blender to make it super smooth (but doesn't grind nuts well at all, so omit or deal with washing two appliances!). I served with roasted and salted pepitas (from the health food store) and a drizzle of sour cream thinned with buttermilk. Enjoy!
