All of the Toma Brand Cheeses are maade with milk from Brown Swiss
cows that are raised naturally and hormone free on Lester Tyler's
family farm, Sunny Acres. Swiss Cheeses age in one of three caves
at carefully controlled temperature and humidity.

Lynnhaven Goat Cheese
Inspired by our herd award-winning show goats, cheeses include
chevre, feta, ricotta, and Paradise's Passion, an aged pyramid with
a bloomy rind. Available at NYC Greenmarkets and Warwick Valley
Farmer's Market or online.

Tonjes Farm Dairy

Tim Tonjes makes three farmstead aged raw cow’s milk, grass-fed
cheeses, fresh pasteurized yogurts, cultured buttermilk, fromage
blanc, whole milk ricotta and mozzarella. Closed herd of 90-100
Holsteins, 40-50 currently milking. No antibiotics, no hormones are
used.
Sherman Hill Farmstead

Small, family owned goat farm and cheese processing plant located
in Franklin, NY. The family milsk approximately forty dairy goats
and use all of the milk to produce small-batch, handcrafted goats'
milk cheeses.

A small scale family run micro-creamery following organic practice
and have taken the NOFA-NY farmer's pledge. Raw goat milk cheeses,
whole goat milk ricotta cheese, goat milk fudge, all natural goat
milk soaps, goat meat. Available at farmer's markets and New Paltz
Winter Market at Deyo Hall. Also available at the farm.

Escot Valley Farm is a small family-run farm nestled in the Rondout
Valley. Our primary mission is to bring the exquisitely rich and
nutty flavors of Pyrenees style aged sheep’s milk cheese to the
Hudson Valley region. We use the same family recipe and traditional
artisan methods that we learned while interning on relative’s farms
in the Bearn region of France.

All cheeses are produced in micro-batches of approximately 180 lbs.
Bloomy Rinds are ripened in a special micro-climate at the
creamery. Waxed cheeses are triple-dipped in cream and colored
cheesewax and aged 60-90 days in a separate "cave" at the creamery.
Naturally ripened cheeses are transferred to the caves at Calkins
Creek Vineyard for long term aging.
