I have one organic farmer who is processing soon and several folks interested (I have a list! Don't worry if you've already contacted me.) Still trying to get the details on pricing, pounds and cuts.

I'm not sure about the breed. I've been emailing with McEnroe Organic Farm. http://mcenroeorganicfarm.com/. I'm also told that Belmond may do half or whole orders, but I haven't heard back from them about availability.
We have pig folks! I talked with Erich McEnroe and got some details. He has pigs going to slaughter on Wednesday, so we need to confirm an order as soon as possible!
There's no price chart, so I'm a bit fuzzy on the cost. From what I calculate, I think overall it should be $5 o $6 a pound after processing and delivery. After we do this once, I'll have a better idea. Erich was throwing numbers at me such as $2 a pound hanging weight, and then $2.5 to $3 for each pound that is smoked or sausaged. So it's tough to say what the finished price is.
Each pig will be about 180 hanging. After slaughter that leaves about 115 pounds of meat (we can also get hocks, feet and fat for those interested).
There will be pork chops, smoked bacon, ham steaks, and sausages. There's breakfast, italian, hot, and sweet. There are also 2 spare ribs per half pig, as well as shoulders butt that can be used for roasts.
Essentially he said that 1/4 pig would be an okay amount per person, but maybe even a somewhat small share (depend on the size of your family).
The meat comes frozen. It will take about three weeks to get all the smoked stuff back. Anyone participating would need to pick up their share at a location near New Paltz at that time.
Hey Meghan, I just saw this post tonight -- I've never purchased in bulk before and so I think I may be interested in a 1/4. Heck, I'd even buy some pieces if it came down to that. I'd love some smoked hocks! Can you let me know how much when all is said and done and where we need to pick up in New Paltz? Thanks!
I don't really have the freezer space... but, I am interested in participating in one of these buys (& I loves me sum bacon!!!) so... let me know if you need an extra 1/8 or 1/4 buy... My arm can probably be twisted... :-)
