Mushrooms from the woods

I went mushroom hunting with the Mid-Hudson Mycological Association this weekend. I got chanterelles and chicken of the woods.

The boyfriend and I had Black Cod with Chanterelle Ragout this evening.

I tried to make the chickens in the same manner and they turned out really tough. Any suggestions?
