Usually, I simply stir fry bok choy with a little garlic and sesame oil, but that doesn't really make a meal. So, I worked in a couple more ingredients and had a simple, spicy dinner.
Bison sausage and bok choy
2-3 servings
2 links of spicy Italian sausage (I used bison sausage from
Readington River Farm. Yum!)
1 T sesame oil
2 cups red bell peppers, sliced
3-4 cups bok choy chopped
2 cloves garlic, minced
Hot chili sauce
2 cups cooked Basmati rice to serve on the side
Heat sesame oil in a pan. Take sausage out of skin and break into pieces as you cook it. Add garlic and red pepper, saute for 2 minutes. Add bok choi, saute until soft. Add hot chili oil to taste. Serve with rice.
Note: You could add some sliced onion before the red pepper
