Every holiday season my mother's kitchen burst at the seems with cookies: chocolate chips, kiss cookies, chocolate-nut nests and Russian tea cakes on platters and plates strewn every where.

Greetings Meghan, thanks for asking. I love making cookies! They're my favorite thing to bake. I like adding sandwiched cookies to cookie trays. People can use any favorite recipe or follow my recipe, below.

Sugar Cookies

  • 1 cup (2 sticks) butter
  • 2 cups brown sugar
  • 1 tablespoon vanilla extract
  • 1 large egg
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 3 ½ cups all purpose flour
  • jam
  • melted chocolate
  • sprinkles

 

Preheat oven to 375 degrees and line cookie sheets with parchment paper.

 

1. In a large mixer bowl, cream butter and sugar.

2. Add vanilla, egg, baking soda, baking powder and salt, then mix thoroughly.

3. Mix in flour, making sure to scrape the dough from the bottom of the bowl. This will be a dry dough.

4. Scoop out small pieces of dough and place at least 1” apart on prepared cookie sheet. Flatten lightly.

5. Bake for 9-11 minutes or until light brown around edges.

6. For sandwich cookies, use a small amount of jam and press cookies together. Dip part way into melted chocolate and set on cookie sheet to harden. If using sprinkles, immediately add a pinch while chocolate is still soft.

Best Ever Pie Crust

 

Okay, I know it's not a cookie recipe, but here at Fleisher's we try and make sure there is a little bit of meat in every course.  Try out some of our lard to make this AMAZING pie crust.

Hey Fleisher's, do we have to order in advance for lard?
Nope, we always have a healthy supply in our frozen section.  If you're looking for large quantities, we could certainly set some aside for you.

I know! I'm sorry! I had been meaning to ask that question and got the opportunity, so took it! As far as cookies go, I'm an eater not too much of a maker. My friend makes these cookies every year and brings me some. They are amazing: Chocolate Italian Wedding cookies.

Here, these are also a favorite of mine although I've haven't made them personally, my friend always makes them this time of year.

Mexican Wedding Cookies (Polvorones)

Ingredients

  • 1 cup Shortening or Lard
  • 2 cups powdered sugar, divided
  • 2 teaspoons vanilla extract
  • 2 cups All Purpose Flour
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 2 cups finely chopped walnuts

Directions

1. Heat oven to 350 degrees F.

2. Combine shortening, 1 cup powdered sugar and vanilla in bowl of electric mixer; beat on medium speed until well blended.

3. Combine flour, baking soda and salt in medium bowl. Add to creamed mixture; mix well. Stir in walnuts; mix well. Roll dough into walnut-size balls; place on ungreased baking sheets about 1 1/2 inches apart.

4. Bake 15 minutes or until edges begin to brown slightly. Cool on baking sheets until cool enough to handle, but still warm. While still warm, roll in remaining 1 cup powdered sugar; place on cooling racks to cool completely.
