Farm Tour and 4-Course Lunch & Beer Pairing w/ Chef Matt Hutchins

Living in Westchester and Putnam, we are so fortunate to have Black Angus cattle and Yorkshire pigs right in our own backyard.   Well, actually it's the 120 acre "backyard" of Hemlock Hill Farm owned by the DeMaria family located in Cortlandt Manor. We are invited to join chef Matt Hutchins of Birdsall House for a personal tour of the farm from a chef's perspective. Owners Laura DeMaria and her father, John, will also be on hand to tell us the story of their farm, which has been in the family for over 70 years (click here for a preview). At our first event last year at Hemlock Hill (see our pictures), we learned the interesting fact that their cattle are not only feeding on grass, but they eat brewer's grain (a byproduct of beermaking) straight from Capt. Lawrence Brewing Co. in Pleasantville. Chef Hutchins gives us the unique opportunity to participate in this organic cycle as we enjoy our true locavore lunch and sip on Capt. Lawrence beer. Carnivore, vegetarian, craft beer aficionado, farm-to-table, nose-to-tail -- this event has it all covered.

As we enjoy chef Hutchins' 4-course lunch offerings, he will discuss his craft of making terrines, sausages, pâté, pickles, and even his own ketchup. Our vegetarian friends are in good hands as chef Hutchins is happy to accommodate all tastes. Birdsall House is known for their ever-changing list of local craft beers, and we will have a chance to taste some in our beer pairing, even with our maple and bacon ice cream dessert!
